A recent study
from researchers at Carnegie Mellon University in Pittsburgh considered
changes in energy usage, water usage and greenhouse gas emissions that could
result from changing US food consumption patterns.
This post focuses on the emissions aspect of that study. It
uses emissions figures from the same source used by the study’s authors, and
nutrient figures from the US Department of Agriculture’s National Nutrient
Database for Standard Reference.
